here's a family recipe for molasses oatmeal bread.
Ingredients (makes 3 loaves)
- 9 1/3 cup flour
- 3 pkg yeast
- 2 1/2 cup + 2 tbsp water
- (or, + 1/8 cup water)
- 1 1/2 cup quick cooking rolled oats
- 3/4 cup light molasses
- 1/2 cup shortening
- 1 1/2 tbsp salt
- 3 eggs
Steps
- Set oven to 375°.
- Combine 3 cups flour and all yeast.
- In saucepan, heat water, oatmeal, molasses, shortening, and salt until warm and shortening is almost melted. Stir constantly
- Add saucepan mixture to flour mixture.
- Add the eggs. Beat slowly for 30 seconds, then beat on high speed for 3 minutes.
- Add rest of flour. Beat on low speed for 7 minutes.
- Shape into ball. Put in greased bowl and turn to coat with grease.
- Cover and let rise.
- Once risen, divide into 3 balls. Set each ball on its own pan.
- Bake for 30 minutes!
